A Jihad works mostly like a Crusade (though I'm not sure if you're familiar with that).
You create a Jihad/Crusade, then target the object on a province. Crusades may only be targetted at non-Catholic lands, whereas Jihads may only be targetted at lands that once, but not anymore, belonged to Muslims.
So you can only target that province with a Jihad if you or another Muslim faction controlled it in the past (making it more of a defensive devise than a Crusade).
Once targetted, an army will appear, but it can only move towards the target province, so you can't use it for other purposes.

One way to complete these objectives is to incite a revolt in the desired province, and then target it with the jihad to 'take back lost territory'.

A Jihad can be targeted against Muslims as well you know... I had an Egyptian Jihad go against the Turks in one campaign.

Jihad is used to reclaim your old provinces. I don't know if rebels are fair game or not, But I have had Jihads against Muslim factions on more than one occasion.

Once you create a Jihad, select it. The provinces it can move to should become highlighted. If the only province highlighted is the one where it was created, then you can't go on Jihad.

As the previous posts say, only a province that is held by a rival faction (Muslim or Christian) and was held at least once by a Muslim nation -- however briefly -- can be the object of a Jihad.

If you're doing so well that you hold all the provinces that were ever held by Muslims, you're winning. Don't worry about the effect on your score. Just make sure your glorious acheivement score is higher than anyone elses.

If you've already created a Jihad unit, don't worry about wasting it. Better to have one and not need it than need one and not have it.
