Usually I let the Horde spread out and then defeat them one after another. If you get rid of of their Heavy Cavalry, they pose no threat anymore.
i don't think the mongol heavy cavalry is the most threating unit inthe mongol army. the mo gol heavy cavalry will get chew up by any elite/bodyguard cavalry. IT's the MONGOL CAVALRY ARCHER that is the most dangeroius. i usually lose more men chasing them then the melee battle.

and to play as the mongols, do this:
go to my computer, totalwar file. go to CAMPMAP, then go to STARTPOS, now you will see notepads that said EARly, late of high. click one of those. now you will see something like this://SetActiveFaction:: FN_GOLDEN_HORDE FT_MAJOR. it's in the miidle of the notepad. now all you have to do is change FT_MINOR ito FT_MAJOR. now start a new game in late, and in the screen where you choose ur faction, the golden horde will be there. you can also played as the pope and other samll factions that were non playable.
