That depends on what you want

Do you want it to be easy?
Then go for the English.
Do you want it to be hard?
Then go for the French.
Or something in between?
Then choose the Italians.

As for story's concern, it amounts to just the same...

But it will be DAMN hard

mod to play the irish? sweet deal does it just replace the rebel irish? the best mod imo would be everything the same but all rebels into countries. nothing else touched.
