Nelo Angelo in Devil May Cry. Hard, but the idea of a one-on-one fair fight, like a duel to the death, is so cool (and I can whip him now ). He is also one of the coolest bosses in a game, and being able to outfight him with a sword is a fantatic feeling (and, having beaten him, you can beat anything else thrown at you until the end of the game)
