This is problem a stupid question, but how many posts do you have to have to post in the other forums?

Forum restriction has nothing to do with post count. If this was the ordinairy forum there would be at topic I could point you to, but the ordinairy forum is offline due to technical problems.

New members of the Org start as a junior patron. Junior patrons can post in the entrance hall, guides forum, apothecary, dungeon and the story/pbm forums but can only start topics in the entrance hall.
Once you have posted in the entrance hall, the moderators (Papewaio and KukriKahn) will make a note of your presence. They are responsible for promoting you and they will do this if you post here regulary. You don't have to post often, but your posts do need to be friendly and helpful.
Promotion to senior patron used to take a week or two, but it is takes more time nowadays.

Once a senior patron, you can post in all forums except the backroom of the tavern. Promotion to the next level, (junior) member, is automatic after a few weeks. Members can post everywhere.

So you don't need to post often to become a full member, just need to be friendly and helpful and then it will happen soon enough.
