Escape (sometime need to hit Esc 2 or 3 times) to get the menu. Select Options then click at the heading on the top to move between the 3 screens ( Camera, Controls and Others I think). Sorry this is from memory but wife using real machine and I'm stuck on ancient laptop.

The other way to change some things at least is to edit the preferences.txt file in the Demo top level folder (it doesn't appear until the game has been run at least once). Indeed, some things like changing Disable-Green-Arrows (something like that) to TRUE can only be done by editing the file. One of its entries is CLASSIC_CONTROLS, change it to TRUE if you prefer that. There's also a CLASSIC_UI but that does nothing (maybe it will in the full game).
