How do i capture recources, like eliphants or camels which are on the map, how do i capture them and use them? And if you capture such a recourse can it only be traded or produced in the province it is in or your entire empire???

Something i forgot to add, how do i capture enemy spies? And after you conquer rome can you play as the SPQR in a new single player campaign? Also by exterminating a faction you automatically can play as them?

Resources are "captured" when you take the town. If you see elephants and camels, that means that province can train elephants and camel troop types (respectively). They are not traded, I don't believe. The troop types are produced by the same buildings as regular cavalry.

Somebody can chime in here, but I'm pretty sure your faction has to have the ability to train those units to make use of them, ie Romans can't build elephants even if they own a province with elephants.

Senate is a non-playable faction. Yes you unlock a faction when you exterminate them (if they are a playable faction). If you win the campaign (even if its the short campaign) you unlock all of them.
