2 questions....
if i'm the Julie family and i set up a trade route with Britania even though i personally have not discovered their territiory, does the trading still work?
is there a hot key to slow down the AI moves on the campaign map?

All trade routes are automatically managed by the computer. In agreeing to trade rights with the Britons, you just allow to computer to choose from their territories as possible trade routes. Even if you cannot see their provinces yet, I'm pretty sure the computer will set up routes with them.
And I have no idea how to slow down the AI's moves.
Their steel shines red
With enemy blood
It sings of victory
Granted by the Gods
And as they return
Bleeding but proud
The horizon burns
And the song is ringing loud
There is no way to slow down the AI moves, unfortunately. Either you see them at fast-foward or you don't see them at all, depending on what you set for "Track AI Movement" when you create the game.
