When will the game come to a complete end?
If so, is there anyway to change the date back to 250BC so that I have amble time to complete my mission.

If my memory serves me right, the end date should be 14 A.D. Don't ask me why, lots of more roman history could have happened but oh well. As for the date, modding is not my expertise, but we do have some excellent modders here, I'm sure someone could tell you.

The game is scheduled to finish at 14AD, the year in which the first Roman emperor, Augustus, died.
The start & finish dates for the Imperial Campaign are found in this file:
RTWHomeDirectory\Data\world\maps\campaign\imperial_campaign\descr_strat.txt
Near the top you'll see:
start_date -270 summer
end_date 14 summer
As for changing the date in a current game, ShellShock's RomeSAGE should do the trick.

I am currently in gameplay, is there anyway to edit the end date as I am running out of them to complete the mission.
Technically the game should end in 27 BC since that's when rome became an empire.
That's not when Rome became an empire. It's when Augustus became emperor. Rome had been an empire since the second punic war. Also Augustus was careful never to use the title of emperor in Rome itself their he was just called by one of his official titles like consol.

I remember a few weeks ago (maybe more) some guy was asking about the end date and he was at 20 ad when he was asking. That really confused me and made me think maybe the game don't end. I haven't been far enough to test or anything but I just remember that thread.
