Is there any way you can enlarge the size of units above "Huge"? For example insted of 160 hoplites you get 480 and so on?

Not for now.
There is a harcoded limit of 256 soldiers per unit, and some units are already 240-men large in "huge".

You may be able to increase the default number of troops by editing the

export_descr_unit.txt

; soldier Name of the soldier model to use (from descr_models_battle.txt)
; followed by the number of ordinary soldiers in the unit

This is the amount of troops at 'normal size' units.

I'm not sure how the hard coding effects this...but as long as you don't exceed the number of troops in the largest unit in the game, I think it would work.

It would, but you'd probably unbalance the game with 240-man legionary cohorts. It would give them a large advantage against units like Silver Shield Pikemen that formerly relied in part on unit size for their strength.
