Medieval TW. Shogun was ground breaking and I loved it but overall medieval is a better game.

I wont comment on Rome.

I would like to see a redeveloped R:TW-like version of it, but that seems very unlikely....

shogun really is an amazing game. It just isn't as complicated as its successors. I do think the idea of uniting your country instead of conquering the world makes it easier to cope with losing. If your faction is eliminated, Japan will still be alright... just under another shogun
