One thing I've done a few times is tech up to a fortress in Khazar(don't bother iwth anything else), and leave a good garrison there, which can take an assault. Inevitably the horde assaults ASAP and I bleed them as they try to take it. In my experience about half the times they manage to take over the fortress, half the times they fail, but both times they lost nearly all of their men.
