You can also edit the files yourself (buildings and units). I suggest you get an editor if you're not used to altering the MTW files. Basically, all you have to do is add a chapter house to the Danes and choose crusader units. I would have been more specific and showed you which lines overwriting but, unfortunately, I don't have MTW installed on my computer right now.
