His name was Henry (the first?). I just didn't expect to see him in the 11th century. Before he died he produced some super heirs, 7-8 stars and excellent stats. I need to use some crusades to boost the piety of his new heir and I'll be in heaven. He also produced a wrap around son, 10 stars, unfortunately only the 0 will show . He's going to make an excellent governor of Flanders.

Reinvent the British and you get a global finance center, edible food and better service. Reinvent the French and you may just get more Germans.

Princes tend to be prone to the "Pride" vice, which negatively affects their command. Perhaps this is what afflicted yer first two sons.

Either that or your king gained influence and/or command after his first two sons came of age, which was reflected in the increased stats of the third son.

Secret pride reduced the first Heir to one star, the rest of his stats were average. The third son had at least 50% in every category, sorry no screenshots.

Influence apparently seems to be the most effective thing ive found that improves princes; high influence = good heirs. Thats what ive found anyway the actual stats of the king doesnt seem to do much i get the a seemingly random range of command, piety and accumen.

I forgot about that effect. It's probably the most probable explanation since I, as the English (naturally) destroyed the French, early (nobles first of course, then rebel clean up ).
