Christians have more increases in law and happiness than any other religion (except the Sassanid religion for law), keeping rebellious cities happy. A max level church plus a max level monestary = a very happy city. Of course, that doesnt mean that all your settlements should be Christian. Leave your primary troop producers as Pagan (if you can afford the hit in happiness due to conflict in governer/ruler) to gain the troop benefits.

No you can't. It is not enough to simply confess, you have to honestly mean the confession and be sorry you did whatever out of a guilty concience.

Only you and God know if your apology is sincere and for the right reasons.

Send a couple of Christian diplomats/spies and family members to the region for a few turns before you destroy the Pagan shrine. This will make sure they wont rebel.

Quick bit of advice: when you start your WRE or ERE campaign on VH campaign, don't try to change religions in cities against the majority population! Religion is the biggest factor behind unrest. Just stick with the majority religion in the settlement and foster it.

You get priest units if you go christian, but apart from that the only reason I see for switching is the challenge.
