If it's all up to me, though, I generally prefer the maneuverability and flexibility of cavalry and light infantry over more cumbersome heavy infantry.
Advance, strike hard, retire, and repeat until desired result is achieved. Or until you die, I suppose, but I find it best not to dwell on that possibility.

I favour a combined arms approach. Infantry to provide the anchor, and cavalry to deal the blows. But if I have to pick one, it is cavalry, preferebly armed with bows.

I Only See Most Infantry As A Way To Tire Opponents For My Cavalry To Have Fun I Also Move Back Away From The Enemy So they Travel Farther And Fatigue More Especially on Hilled Maps

Combined arms is definately best. I like a mix of the heaviest down to the lightest troops. This gives you a good strong line of heavy infantry or pikes, some skirmishers and archers to drive off HA's and hit and retire types, some heavy cavalry to break heavy infantry lines (after engaging with your heavy infantry of course), or to drive off heavy cavalry, I also like having some skirmisher cavalry to pour missiles into enemy lines' flanks and sometimes add numbers to heavy cavalry charges.

Earlier, it was a fairly balanced Eastern Roman army (2 Plumbatarii, 3 Comitatenses, 1 Liminatei, 1 Eastern Archers, 1 Priests and 1 Legio Lancarii) against 5 peasants and a general.
The peasants, as you'd expect did nothing. The warlord almost singlehandedly killed 200 men. The maneuverability of cavalry is great. Can get out of sticky situations without too much loss, and if they have a good charge, they're more likely to rout the enemy.

Well, I love them equally all (Varangian Guards are cool just like Lancers, so are longbowmen, etc) but in the end of the day you don't wanna walk. As you can see, we love cars and I'm sure people back then loved horses. I prefer to mount my men. I can catch routers and when my troops rout they can flee unharmed which saves me money.

I tend to like all types of units because you need alot of flexability in war but i use Calvary as my main units such as generals usually. Sometimes Infantry cause they are cool, like Teutonic Knights.
I agree You do Need To Have A Balance some times
Generally, it depends on the enemy. A balanced army should always be fought with a balanced army. An all-infantry army should definitely be fought with archers + cav combo. A predominantly missile army should be fought with cavalry. Cav army should be fought with a balanced army and preferably with spearmen/pikemen.

I'd have to say I like infantry the best. They have saved me numerous times. I like how versatile they are. I find I only use cavalry for mopping up operations or to quickly decimate missile units.
