Well egypt for me outside of desert is mainly a cavalryarmy no matter which era you have them.

    Early

4 Ghulamcav val 2 (one is gen)
    2 camel warrior val 3
    2 saharan cav val 4
    2 faris val 2
2 faris armour 2 (since most will have some horsearcher and a shootout is likely some armour pay off more then valor i think)
    4 vanilla archers armour 1

    High (mp 10k nondesert)

This army will be very similar but egypt inf is not very good nondesert but their cavaly is one of the best.

3 mamluk cavalry val 2 (one is gen) they have armourpiercing and should beat a heavy western knight head on
2 val 3 camel warrior (where the mamluk is likely to fail camel will prevail)
4 val 2 faris (possibly make same thing as in early, buy armour for a couple instead)
    2 val 2 ghulam cav
    2 val 3 saharan cav
    3 pavise crossbow

This being said egypt will have a pretty hard time in early or high on nondesert simply because they have no competetive inf.

In late it becomes a whole diffrent game for egypt who can no longer be considered an underdog. They still have excellent cav and now they can anchor their line with 4 arqeubusier val 4 that will for cheap money keep higher cost enemy inf busy until your superior cav can hit the back of enemy inf.

Then again, egypt prolly would not be my first choice vs a skilled oppponent in a tournament game.
