Eh what! I had no idea that could actually happen!?
I ran my unit of generals ragged once, I just thought they moved slower and had a tendency to get beaten in arm wrestling contests.

I thought units could only die from exhaustion when they were swimming. That happened in a game where the Vandals attacked across a river. Some of their units spent quite a lot of time in the water, and next I see a river filled with floating corpses! Archers didn't shoot them, so the logical explanation is that they got exhausted and drowned.

You had a unit die from exhaustion? Never ever ever ever seen/heard that happening. I have chased enemy infantry round and round even when they have been exhausted when the battle started, but they have never just dropped due to exhaustion.
I'm sure you are sure, but you want to check they had no archers nearby to kill them on auto fire?
Maybe just me, but I thought units would only rout due to unhappiness caused by exhaustion.

they had archers....on the other side of the settlement I was attacking, no way they could fire at me and I was looking at my men....no arrows flying at em
and they were grabbing for their necks you know?
like they were gasping for air

A lie. Units just can't die from being tired. Period.
