It didn't take them 2 hundred years... It's not like they were trying continuosly to conquer Iberia for 2 hundred years... They conquered half, the half that belonged to Carthage, and then turned their attentions elsewhere to Greece... Then eventually came back and conquered the other half.
Actually almost all of Iberia was conquered in under 60 years, so where 200 came from i have no idea. By 197BC the Cartheginian half had been conquered and by 133BC 9/10ths of it belonged to Rome...
