Buy a few Dhruzina Cav as mercs - they dismount to feudal foot.....and while slow it can be fun to watch how they mice other foot units.
You have to mod the game to train Feudal Foot Knights. Either mod them as always dismountable or mod the FFK units to be trainable. The only other way to deploy them is in a siege by dismounting your FKs or ERKs (the same thing) before deployment. They cannot be dismounted at any other time. Feudal Foot Knights are pretty much the best catholic faction infantry during the early period.

If you want it simple, get the XL mod, there you´re able to recruit foot knights and to dismount basically every cavalry unit at any time.
And if you don´t want to mess with your game, bamffs advice is the last posibility.

The cavalry you mention, knights, can only dismount in special situations, such as a siege. This is the case with the largest part of the cavalry, especially if they are there to deliver a blow to the enemy in a charge. I do believe, however, that horse archers (and Lithuanian Cav) can dismount in any situation, but if I'm wrong please correct me.

Much of the later heavy cav (ie gothic knights) can dismount in any battle, IIRC. I never have dismounted any cav, but it can be done. Frogbeastegg's wonderful guide tells which may and which may not, but off of the top o' me head I can't recall what is what exactly.
