If you want to stay in the Medieval timeframe, I'd recommend the MedMod. It contains interesting concepts also present in Pike&Musket (homeland/recruiting zones) and grants a nice, overhauled units roster to most factions, especially to Poland in late. The only downside is that you can't start in high with this mod but well.....
