From a very Anglocentric perspective, after playing a couple of dozen turns as England, I think there are enough. (I know those who like playing in Eastern Europe have sometimes felt short-changed and can't comment on that yet.) I have a comfortable number of provinces to micro-manage and the French settlements seem close enough to be a threat, with their large garrisons.
I like the # of provinces. Its also worth noting I got the Mongols are here messege so I lifted fow to have a look at the size of their horde, but meanwhile was pretty shocked to see the campaign map a load of different colours, I only saw 2 rebel settlements, a big difference from the Rome map that was flooded with grey provinces.

I think there is the right amount of provinces in the game, and im playing as Ruissa atm. the well spaced out prvinces there could actuaslly help when the Mongols arrive.

Just right to too few provinces. For example, the Byz have few provinces. I expected more cities/castles...
