It appears that attempting to use a stat_armor_ex line crashes the game... So... It may not be possible to mod the armor upgrade values.

Re: A note for those interested in modding armor upgrades...
I just give every unarmored unit in the game that can be upgraded 3 armor for now (4 for those who go straight from unarmored to light mail). Considering how cheap leather tanners are, it is highly unlikely unarmored units will stay that way for long anyway.
