For Venice the Carroccio Standard V, is it a trainable unit in the campaign games or is it only for battles etc?
If it is trainable how where and when.

It is trainable, in cities from the town hall line of buildings i believe.

For all Italian factions from Cities with Councillors Chambers, but beware they should be mainly used on defensive battles due to them being slow, not as slow as catapults but still it´s good march wasted if you campaing with them.

They're simply EXCELLENT to have around a gate or bridge on the defensive. It makes the gate defensive unbelievably hard. As long as it isn't too overwhelmed(ie. enemy troops push through the entire formation), they will hold no matter what(well, almost). Pushing one along with the siege towers isn't a bad idea either, as troops attacking the walls can get routed before they get a chance to contact properly with the enemy.
As for building it, you'll need the level 2 town hall building, councillor chambers to build it. This means you need at minimum a minor city(stone walls). That shouldn't be a problem though, Milan, Venice and Genoa all start out as that.
Still maintain that crying on the pitch should warrant a 3 match ban
FWIW, the Big Towed Cross that you can sometimes pick up on crusades has that same effect. Great for assaulting walls with anything but DFKs/Dismounted crusaders who'll fight to the last man anyway.
But I'll agree that it's best used with Italian spear Mil (and Venetian Infantry, Dismounted Men-at-Arms, Dismounted Lanzia Spezziatta etc...) who are great fighters with poor morale.

I like having one around when my infantry take a head-on charge - increases the holding power of the line, especially against the blasted Mongols, giving me time to slip round the back and murder the eight-dread khan

they increase the morale of troops in a radius around them (not sure how far), and the crews that push them will fight to the death and never rout

They give a big morale boost, you can except your troops to fight even when they are charged from two sides. Not sure exactly hpw much or how far though. I think the distance is equal to that of the generals influence.
