Apologies but I don't seem to be able to find a thread on this already. What are the circumstances under which you can retrain your General's bodyguard (in the event of battle losses) and/or is there any way to accelerate regeneration (assuming it's an automatic process)?

Regeneration is automatic. I don't know of any way to speed it up.

You can retrain this unit for armor and weapon upgrades at a settlement which has the relevant upgrade building (armorer, smith etc).

I noticed that I seemed to get quicker results regenerating a general if I keep him in a city.

Though, I haven't been mesuring stats on this so I wouldn't count it as gospel or anything, it seems to work better for me to keep my decimated general units in town for a while.
