you can edit unit stats in notepad. just open the export_descr_unit file and edit the unit you wish to alter.

Yeah same as RTW, only there are none of the textfiles in my data directory. I guess what I meant was, do I have to unpack and rename the .pack files? And if so how exactly do I do this, programs etc.
