Well think of it like this.
Dread= One Bad Ass Mutha. He will normaly scare the poop out of people, causing less chances to rebel cause they ar just that, scared out of their poop. With dread comes a normally low piety rating. As for morale, I think some traits cause morale+ while some morale-
Chivalry= A beacon of light. He has no need to scare people because people normally LOVE him and would never, or rarely, wish ill on him. This helps reduce unrest, cause dread often causes unrest. On the battlefield...well I do not really know, for most of my guys are dread heavy![]()
Chivalry boosts your own morale, dread scares the enemy to pieces.
1 point of Chivalry adds 0,5 to the population growtg, AFAIK. So you can use chivalrous governors to boost your cities/castles.
Basically what's been said already - chivalry helps with keeping settlements in good order and dread lowers your enemy's moral (and, i believe, gives a 'fear' boost to public order)

Just a side note-
Dread is great in the late game when your cities are already too big, or cities that grow too fast for you to keep up with buildings (cordoba).
Chivalry is great in the early game when you need the population boost to get your cities jumpstarted.

I'd add, dread and chivalry are on the same scale, and are mutually exclusive.
You can't have dread and chivalry together.
DAGNABBIT! No wonder I could'nt get TuTUSH the Dreaded Chivalrous Beaver.
