    Birthday dinner will be Kukri's patented Scare It Into Submission Prime Rib of Beef, with home-made horseradish, seasoned pomme frits, au juice, & a small salad.

    And beer.

    Serving up in about 12 hours. Ya'll come on over.

    Home made horseradish, condiment of the Gods. I remember helping my Grandfather dig the roots from his garden wash them and grind them up. Add a little salt & vinegar, the perfect compliment for roast beef. Just make sure you wear rubber gloves during the preparation stage, and don't touch your eyes or other sensitive body parts, you will only make that mistake once.

    Certainly. For about a cup-and-a-half of the stuff (enough to go with 4-5 roast beef servings):

    1 cup cubed peeled horseradish root, 1/2 inch pieces
    3/4 cup vinegar
    2 tsp. sugar
    1/4 tsp. salt
    Combine ingredients in a blender; puree.

    Or, as my Dad used to like it, beat the heck out of the mixed ingredients with a wooden mallet, until it's about the consistency of mashed potatoes. :)

    Whatever method you use (blender or manual) serve or store the stuff in glass or plastic. It's strong enough to discolor metal.

    Boy, Howdy - Amen and Ameneh to that. That time, age 6, watching Dad mix the stuff, rubbed my runny nose. Ouch!

    Yorkshire Pudding Ingredients

    2 Eggs

    Half a Cup of Plain Flour

    Half a Cup of Milk

    A Pinch of salt

    Raisins (optional)

    1/4 cup of bacon drippings or lard

    Take the flour and add it to the mixing bowl. Then crack both eggs and beat into the milk. Make a well in the centre of the flour and beat in the eggy milk mixture like you are making pancake mix. Use a hand mixer, whisk or fork for the beating ensuring you leave no lumps and beating in as much air as possible. This is important to get them to come out fluffy.

    You should have a somewhat thick, yellow mixture now. If you prefer your Yorkshire pudding sweeter then you can add currents or raisins to the mixture (I do) as well, mixing these in thoroughly.

    Yorkshire puddings take about 10 - 15 minutes to cook so these should go into the oven towards the end of your cooking time. It's all in the timing, they are best served immediately from the oven.

    The oven needs to be preheated to around 425-450F. Add a LITTLE oil, dripping or lard to each individual pudding tray and throw this in the oven for a few seconds to melt it. Needs to be hot. Don't grease the sides of the cups, just the bottoms, or the pudding won't rise.

    Then, spoon the yorkshire pudding mixture into the preheated tray sections trying not to overfill. Now, put them in the oven and in around 10 - 15 minutes they will be ready.

    Avoid opening the oven door as this will cause them to flop and you want fluffy, nicely risen Yorkshire puddings, not hard flat pancakes.
