When I crusade from north Europe, I walk south/southeast untill I hit the coast then hire a merc boat and sail the rest of the way. Works fine, so long as you don't bump into a big ol' Egyptian fleet. Never had significant attrition doing it this way.
From England, I walk to the south coast of France and boat it from there. From Denmark or Poland, I walk down to Greece and hire my boat in the vicinity of Thesselonika.
I mostly do this to avoid walking through Asia Minor which can be a real pain with all those narrow passes etc.
