I remember in Rome, if you walk through enemy towers, then they becmoe yours. However, in this one, even if you do that, they still fire arrows. How do I stop that? Or do I have to actually destroy the towers?

You have to destroy the enemy units near the towers with the exception of the gatehouse I believe. Normally once I take the walls and kill the nearby units, I just get my men away from the gatehouse and towards the center of the city/caste as soon as possible to minimize casualties.

The tower will fire while any friendly units are nearby.
You cannot take them like RTW.
Destroying them will perma stop them firing though

Trebs can destroy towers with as little as two rounds
