The HRE and England are good choices. They have some good foot soldiers, with a mix of everything else

FRANCE!!!! Since you've plyed about two campigns already you problly know the game fairly well, so France will be a good pick snce it'll give you a bit of a better challenge, and also in themid game you get some cool infintry AND CAVALRYYYYYYYYYY

Aye France is a fun nation to play. For me they represent everything I love about medieval times somehow.
