The trick is to read the subforum description ;)

This subforum is solely for tutorials, tools and guides for modifying your game. Only post a thread here if you are posting a new guide, tutorial or tool. Threads researching modding an aspect of the game in depth are also acceptable. Questions or requests for tutorials should be posted in the Modding Questions forum.

bah, however often I check the forums DG always gets there first

As said above thread was in wrong place it should have been in Modding Questions - where it is now moved to.

Welcome to the forum anyway s_tabikha (we don't shoot people for the first offence).

Answer to your question is you need to edit export_descr_unit.txt, I'm not sure which unit you mean by companion cavalry but example below is for a typical generals bodyguard:
    type barbarian rebel general
    dictionary barb_rebel_general ; Rebel General
    category cavalry
    class heavy
    voice_type General_1
    soldier steppe_warlords, 12, 0, 1
    mount generals horse
    mount_effect elephant -4, camel -4
    attributes sea_faring, general_unit, hide_forest, hardy
    formation 1.5, 4, 3, 6, 3, square
    stat_health 2, 0
    stat_pri 13, 6, no, 0, 0, melee, blade, piercing, sword, 25 ,1
    stat_pri_attr no
    stat_sec 0, 0, no, 0, 0, no, no, no, none, 25 ,1
    stat_sec_attr no
    stat_pri_armour 9, 10, 4, metal
    stat_sec_armour 0, 0, flesh
    stat_heat 5
    stat_ground 0, -2, -4, 2
    stat_mental 13, normal, untrained
    stat_charge_dist 50
    stat_fire_delay 0
    stat_food 60, 300
    stat_cost 1, 1370, 262, 140, 210, 1370
    ownership slave
The number in red is the attack value, the number in blue is the charge value and all the numbers in green combined make up the defence value. There is actually a pretty good explanation of what most of the numbers mean at the top of the export_descr_unit file. (or should be unless you have a modded version which took it out)

If you aren't seeing any change at all to the stats after you edited make sure you are making change to right unit. They don't necessarily have same name in that file as is shown in game - find your unit in data/text/export_units.txt first and then look up the internal name; the one inside the {brackets} in EDU.
