What difficulty do you recommend for a vanilla veteran for this mod? Usually I play on HH but I'm thinking of playing moderate battle difficulty and expert strategic difficulty. What do you think?

Yes, the game is designed for VH/M. The unit stats are much more balanced than in Vanilla and anything harder than Medium for battles will make it VERY hard indeed to will, especially against superior troops. Similarly, Easy setting for battles kind of makes them ... well ... easy in an almost trivial way.
The campaign difficulty setting is more flexible - you might want to give Hard a try until you learn the ropes. On VH, expect to struggle, especially if you go for some of the more difficult factions.
Finally, the mod is also designed to be played on Large unit size setting.

Because the AI gets a population boost if it depletes its cities... Playing on huge will unbalance the game as you'll have more trouble getting enough people to halt the endless swarms of enemies. Your mileage may vary.

Actually the unit size doesn't matter. The script is designed to know what unit size you have it set to and to replenish the appropriate number (half the amount) that have been recruited. The size will not screw up the script.
I would suggest huge. Just my personal preference.
Yeah, but the player doesn't get the population refund (and it took me around three seconds to guess why...). That can get a bit problematic if the war becomes attritive.
