I don't know, it seems to me that "fighting to the death units" are far harder to kill than they normally are, simply because the surrounding enemy is too lame to stab them.
i think elite units instead of fighting to the death when they are surrounded go into berserker mode.

As mentioned, well schooled generals of all times have made sure to leave their enemy a way out... The catch-phrase would be: "You don't know how bravely someone can fight until you give him no way out".
As soon as an enemy unit's flag starts flashing red, I pull one of the units fighting them away - much easier to capture/kill when they are routing, plus if you kill them all, there's less money for you when you ransom them later.
If one of your units does it, I suppose there is an added advantage that it ties up 3-4 enemy units in melee for longer, allowing you more space to maneuver your other troops (if you have any left).
