I read in a book on Roman field tactics that surrounding an enemy army from all sides was often deliberately avoided, because troops would be more likely to fight on, and so an 'escape route' was usually left, with cavalry waiting to pounce on routers of course

Classic Mongol tactics, along with the feigned retreat.
