This first one's obvious, but it would be very convenient to have. In Shogun I always found it annoying that you had to load to access the menu from the campaign map. It would be nice to have a simple drop down menu in Medieval.
Second, let's say you press "end turn" and the AI invades you in two different places. For the battles you get the little pop up box telling the size of the invading force(s) and whether you would like to defend, retreat etc. This is good but what I would like to see is that when you have completed one battle the game does not take you back to the campaign map but, instead, takes you right to the next battle. So, when you click "ok" after viewing the list of unit kills another box comes up with the info on the next battle (numbers, which province is being attacked by you or the enemy, options to defend, auto resolve, retreat to castle and so on). This way you don't have to fight then load back to the campaign map then load the next battle again.

I'd like to be able to do what the AI can and reinforce my provinces when they're attacked.

*Shrug* It's an advantage that the AI has (& IMO needs). It just means you've got to be a little more aware of whats going on around you, and less focused (to the exclusion of all else) on your targets.
Although i wouldnt claim to be an expect on the subject, it sounds very Sun Tzu to me!
