i dont get it

i dont quite get all this unit stuff, it seems to me that, each empire or faction gets a basic set of units, then on top of the each faction gets an elite or special unit, then theres aslo certian units that u can only build if u have a certian provence, so what im saying is, for example, im the byzaantine empire, if i capture the provnce needed to make templars, i could build templars? even thought the byzantines never had templars? sorry if i sound really confusing
