You can unlock all factions in M2:TW by entering your "C:\Program Files\Sega\M2TW\data\world\maps\campaign\imperial_campaign" folder. You can do this by typing it in the navigation bar in Windows Explorer.
The useful file that you require is the descr_strat.txt file. Open it up and you should see that a part of it, close to the top, looks like this:
playable
england
france
hre
spain
venice
end
unlockable
sicily
milan
scotland
byzantium
russia
moors
turks
egypt
denmark
portugal
poland
hungary
end
nonplayable
papal_states
aztecs
mongols
timurids
slave
end
Change it so it looks like this (make sure that there is a tab space before every faction's name or the campaign will fail to start):
playable
england
france
hre
spain
venice
sicily
milan
scotland
byzantium
russia
moors
turks
egypt
denmark
portugal
poland
hungary
end
unlockable
end
nonplayable
papal_states
aztecs
mongols
timurids

After you have done that, all fully playable factions are available to enjoy right from the start.
Unfortunately, the Aztecs, the Mongols and the Timurids cannot be played without further modding. The Papal States can be played, but it probably will be a rather buggy campaign since the faction is heavily scripted.
If you wish more information on playing as these non-playable factions, please don't hesitate to post here. I'm sure one of the modding experts whom reside in that location will be able to aid you in operating them. Good luck, cheers!

Just follow Omanes' instructions and you should be fine.
One minor addition though: the descr_strat.txt file is a "read-only" file. Before modifying it, right click on the icon of the file, choose the option "properties"; uncheck the box "Read-only" on the bottom. Now you can modify the file and save the changes.

To mod units, you simply have to enter your "C:\Program Files\Sega\M2TW\data\" folder. You can do this by typing it in the navigation bar in Windows Explorer. Next, simply open the file named "export_descr_units.txt". Once you have done this you can change add new units and change unit statistics at free will. Make sure you back it up though, just incase you make any mistakes that could corrupt your game.

I believe you need to extract it using the unpacker first.
That can take a fair amount of time (and HDD space); so I suggest you read the mod forums while you wait

Whenever I try typing in
C:\Program Files\Sega\M2TW\data\world\maps\campaign\imperial_ campaign
into the windows search I always get a message saying that the folder doesnt exist, am I typing in the wrong thing or am I just searching in the wrong place?
Like sapi said, I think you need the unpacker for that.
You can, however, search it manually. Go in your M2 folder, go in data, then world, then maps, campaign and imperial_campaign. If you can't find it, then you probably need the unpacker.
