There was a series on the History Channel called War and Conflict which covered the Irish Civil War, and there might be a DVD of it but all I could find on the net was this DVD on The Secret History of the IRA.

I'd try to lay my hands on Tim Pat Coogan's books on Michael Collins and De Valera. Also there is a fine documentary that I picked up in Ireland in Gaelic with English subtitles. Can't remember the name at present but I'll find it later if I can
i just watched the wind that shakes the barley, have you seen that?
it is a great film, it won the palm d'or at cannes. it gives a good feeling of the time. it is not based on specific historical events though so it can only be reccomended it to get a sense of what was going on, rather than to learn anything specific.
Something like the bibliography from the wiki article would be a good start, I suppose. I think I read Green against Green somewhere, it was pretty good. There are plenty of books dealing with 20th Century Irish history, but likely many of them would only be available in Ireland itself. IIRC the Osprey book on the Anglo-Irish War also has a section on it.
As far as movies go, The Wind that Shakes the Barley and Michael Collins are two relatively recent movies depicting the conflict, although both are focused primarily on the independence war and neither are scrupulously accurate. The latter is a better film IMO.
And I see you mentioned it already, but in case anyone wondered about it The Sniper is a classic short story set in that conflict, depicting a sniper duel during the fighting in Dublin.
I'll see if I can find some more literature info.

Michael Collins is a good film but as you say more from an enterteinment point of view.
I just read that short story and I don't think classis is the word I'd use to describe it, my word would have fewer letters.
