Although there are some recent modern works (including the Haldon-edited Byzantine Warfare volume for Ashgate, and Osprey's recent Byzantine Infantryman), this link should provide you with all you need:

I can particularly recommend Sowing the Dragon's Teeth, but it is very expensive these days.

Do also recall that Byzantine history covers a round thousand-year span during which the empire's internal organization, external enemies and military matters in general all underwent considerable changes.

I want to add what also are you interested in actually. Books are mostly for the general reader, except the in depth ones, but if you are really hardcore, try the actual sources such as the Strategikon by Maurikios or the Taktika by Leo or the Strategikon by Kekaumenos.
