Being new at the game, I haven't encountered the Mongols yet (they're in my games, but I'm playing in Western Europe). If I play as Russia, in what province can I expect them to arrive? Bulgar? Sarkel?

they arrive near sarkel, or near baghdad. i'm playing my first russia campaign and they showed up at baghdad, and i haven't fought them yet.
most people meet them by setting up outremer in response to a crusade, rather than necessarily playing as russia/turkey/egypt/byz.

When it comes to more advanced information, such as how to manage your kingdom, settlements, unit stats. etc, I look for stickied threads off course. It's no point in people to elaborate over and over for each new member. My above question, on the other hand, was very simple an straightforward.

Sarkel is where the normally show up. Don't be suprised if you see some coming out of Bulgar either. (The main body arrives around Sarkel but some arrive around Bulgar to.) In my current game the Mongols had arrived near Baghdad. Well they have Antioch now and a lot of men and generals left.. but they're all getting older and I'm planning on outliving them. I haven't fought them since they've arrived and I'm allied with them! My army in Eddessa has got them into conflicts in Antioch against some Venitian Crusaders and a Moorish Jihad. I didn't want to fight the Mongols lol. So I teched up on gunpowder and mighty Russian cavalry first.
If they arrive in Sarkel you'll be fighting them right away though. You'll need to build armies to defend bridges, make peace with Poland and Hungary, and hope that you can defend against the Mongol onslaught.

At first I thoght it was random but now I'm thinking its actually coded...whenever I play a faction that has more provinces in the southern part of the map I see them in Bagdad and Whenever I play a more northern faction I end up with Mongols near sarkel. Could be pure chance though, anticipate one of the two regions.

There are three regions were they spawn: Sarkel, Baghdad and Yerevan. When they spawn near Sarkel they usually head for Kiev. When the spawn near Yerevan and Baghdad they head to Antioch. Sometimes they get lost and wander through the desert or steppe for some fifty turns until they remember their destiny and head to their target.

With Jihads and Crusades blaring at both sides it's gonna be hard to maintain peace unless you decide to ignore those. And yes the dreaded mongol shuffle is very annoying as you have troops sitting around in middle of arabian desert doing nothing but following the mongol army around...very annoying.

if you let them settle down, they get to pump out lots of free upkeep units. on the other hand, this dilutes their veteran stack/high dread/high command generals.
i took them out before they settled down in turkey and egypt campaigns, but in my russia game they have already wiped out egypt, made turkey a vassal and are now smashing up the byzantines. i'm attempting not to fight them now so that i'm not in the middle of an expensive, offensive war when the timurids show up...

I think it's actually 5 provinces. They can appear anywhere from the province just north of the Caspian Sea down to Baghdad. Where they appear tends to determine where they go. If they appear in Yerevan they tend to muddle around in the mountains for long periods, if they appear in Baghdad they usually go after the Holy Land, and if they appear north of the mountains they usually wind up going after Russia/Poland.
They appear in waves, too, 3 or 4 waves of troops; I forget which. What I always see is the lead wave moves out and does a few things, then starts backtracking to join up with the second wave. Then the mass moves on for a bit before backtracking to join up with the next wave. This continues until all of them are on the map.
Example from one game: they appeared in the province with the Caspian Sea, just on that little bit of land between the northern edge and the border. The first wave moved west, took Sarkel, and continued on west. They got as far as Kiev before the next wave appeared, at which point they headed back east. After joining the next wave they sacked Sarkel again and returned to Kiev. Before taking Kiev the next wave appeared and they moved east. After joining up and sacking Sarkel yet again they returned to Kiev and this time sacked it. Whether there was a fourth I can't recall, but this stayed the same pattern until they were all on the map. When they were all there, they took Kiev again and settled there, then proceeded to expand and cover the whole northeast region.

They come in three waves of 3 to 5 stacks. If you beat the first wave you will get a message that is faction destroyed. Don't let that fool you. The will return with a fresh stack and be at war with you. You can beat them in tree ways:
1. The ugly way. Only cowards and descendants from the Mafia will do this. Create an army of experienced assassins and take out their generals.
2. The easy way. Generals that don't trust their skills in the open will do this. Fight them at choke points like bridges, river crossings or cities. If you play with England, Turks or the Poles you can use stakes.
3. The brave way. This is the way real men fight and die. Meet them on the field of glory and fight them. Their are many ways to do that: all cavalry armies, armies heavy on archers you name it.
