    Farms are worth it now and squalor doens't kill like it used to in RTW. And taxes do provide a bigger chunk of income compared to RTW as well.

    The fastest way for castles is to pick your biggest starting city, put your highest chivalry governor in it, and then convert it to a castle when it hits 9k citizens. No more waiting for population.

    Also recruiting units doesn't decrease the population anymore I loved doing that in RTW, capture some 400 pop village and have it up to 2000 in a few turns as hordes of peasants descend upon it from all my overcrowded cities.
