Do mercenary units stay in the area they've appeared in until someone has hired them (and accumulate, so that you can raise yourself a nice big army on the spot if you have the money)? Or do they vanish after some time?

its a pool, AFAIK, so it just stays where they are until someone hires them. that would be my best guess.

Mercenaries will only reach a certain amount (usually 1 or 2), then stop increasing in number. But once they have appeared, they do not disappear until someone hires them, then they will take a while to replenish up to their max amount.
