for #3- its just for realism- IIRC, they did use them, but use thier spears and swords much more often, so they chose to use those & not the bows

Well... then why label it "missile cavalry"?

The label "missile cavalry" means it should shoot missiles.

This isn't the name of the unit, it's the unit type label "light cavalry, heavy cavalry that sort".

That label helps the AI making up formations, which admittedly it is not very good at.
EDIT: The bow etc. depicted on the unit is because the unit in real life would have used aforementioned bow and arrows; but also its lance and second side-arm. The problem is, however, that RTW only allows for 2 weapons per unit, and the descision was made to keep the lance & second side arm - and reduce the bow and arrows to mere decoration.

They can use the lance as a "sidearm" ; )

Correct and for cata's:
1) Bow
2) Lance
3) Sword/Axe.

That's 3 in my book - which is one too many for RTW. Some cata's get the bow/lance; other the lance/second-side-arm combination AFAIK. But the unused weapon is still painted on the unit, because in reality it would've been used.
