I've seen it happen plenty of times myself. Most often examples from my games are - Milan destroys HRE, England destroys France, Spain destroys Moors, England destroys Scotland (or vice versa, it seems to depend on whichever takes York first, as if the Scotts do that they seem to go on a rampage, grabbing Ireland then Wales and then booting English off the Brittish Isles), Mongols destroy Russians and at times (namely if Mongols appear south of the Caspian sea) Byzantines destroy Turks (usually they just sit it out for most of the games, with Byzantines occasionally claiming some stuff on Asia Minor, then being beaten back by the Turks, only to conquer some two-three provinces again).
