Are there some hidden stats that are not displayed on the unit cards that make some units better/worse than their stats would predict?
The reason I ask is because units like Polybian Triarii look worse (stats-wise plus they lost their Phalanx ability) than their pre-Polybian versions but cost more.
The answer is yes, although I do not think this accounts for your observations. Both mass and lethality are not shown. Also, if the primary weapon is a melee weapon, the attack and charge values of the secondary weapon will not be shown.
However, I think Polybian Triarii have intentionally lower combat-stats than their Camillian predecessors to make up for their increased mobility.

What are mass and lethality and how do they factor in - and most importantly how do I get to see them?

The points you a melee weapon has that you see in game is used to calculate the chance that it has to be a hit, I believe. The lethality is used for calculating the chance that the hit was lethal.
Mass is something that is mainly used with calculating charge impacts.
There also other things that might not be obvious from viewing the info in game. The best way to check is by looking in to the files.

That number affects lethality more than virtually anything else. The higher it is, the faster your units swing with their weapons, increasing the probability of a killing blow.
