On the field, chase them around (they can't fire whilst running) with light infantry and/or cavalry that's just tough enough to kill them when they eventually catch them. Approach in loose fomation to reduce casulaties before the pursuit. The important thing is not to let them stand still.
In a siege, get a medium pike phalanx (mercs if necessary) and grind down the main street. Even armour piercing slingers won't do rapid damage to the front of a phalanx in good order. Once you compress them, many will have to stop firing to avoid friendly fire. Send your cataphracts and spearmen (who can hold and pin any Galatian heavy infantry) round the houses to hit them from other sides. The important thing is to keep their slingers facing the front of armoured troops.
Fight like a meatgrinder
Encircle them, heavy cavaly to the left and right, light to the rear and (preferably) phalanx infantry infront. Leave your own missile troops at home.

And unless you literally have no other option, never, EVER, attack uphill, as the extended range will have them demolishing you long before your missile troops get in range to reply. Even if you are attacking them with light cav, the elevation will provide the slingers with the additional range to release a few extra rounds, which could make all the difference between a unit arriving fresh and mostly intact versus one that's lost 1/4 of it's troops and is tired and wavering.

Horse archers are good, as slingers have no defence against missiles. Put them in the cantabrian circle formation and the slingers won't hit very well. Also if you have other cavalry units, once their main infantry is busy you can run them in loose formation and kill the slingers, or at least pester them to make them spend their time withdrawing from them instead of shooting.
