It's pretty much automatic for the Pope to call Crusades againsted ex-commed factions, although he usually waits a few years after the excommunication before doing so. I won't claim to be certain of this, but I *think* the Pope can only call for Crusades against one ex-commed faction at a time (somewhat similiar to how you can only receive 1 Papal warning per 10-year period).
