If I conquer a province, do I have to destroy the previous buildings for province control (i.e. hellenized, province, allied state) before building my own? If I don't what disadvantages will I have?

Previous government buildings get automatically 100% damaged when you conquer a region. Upon destruction (which has to be done manually), you will be given the option of building a Regional Pacification which is the starting point for building a type I, II, or III (depending on the region) government of your own.

Thanks for the info. Hm, I conquered my first Greek city as Romans and no buildings were damaged. What about other buildings like Greek blacksmiths or granaries for example?

Yes, I have activated the script. A damaged building would be indicated by a red bar covering the symbol, right? I destroyed the Greek government building but could not build my own. Do I need the regional pacification "building" for that?
Yes, the sequence is
1. Capture, Destroy former owner's Gov building (I also usually destroy any building that is not a wonder and not in my own building tree, except I might wait with temples for income, experience or pacification reasons, same for other buildings helping with such), build Regional Pacification.
Next turn Reg Pac finishes and you can decide what gov building you want and start it.

Remember also that the more buildings you have of a different culture in your province, the greater your culture penalty for Public Order.
For example if I was playing as Romani and captured Taras, I would look to knock down all buildings I cannot upgrade that have Greek culture, and upgrade those I can upgrade ASAP.
Sometimes it is worthwhile knocking down an apparently useful building so you can increase taxes/reduce garrison requirements in the short term. Knocking down a +5% public order building that is giving you -5% public order from cultural penalty is a net gain of about 400 mnai. Leave it there and it does nothing for you.
This is unfortunately a great motivation to rush as you cannot knockdown or upgrade the final levels of Walls/Governor Residence/Roads/Farming while will all add to culture pentalty public order negative modifiers.
