Being honest, not sure what I would sell. If I was going to sell anything, it might be some troops I would be getting rid of anyway. For example, in Rome:Total War, I made some units just to garrison cities at different settlement populations, so selling them would be fine.
Probably the only thing I would sell is resources/money, or possibly attack on a nation, if that attack can serve in my interest if they are a minor nation which means nothing in the grand scale of things.
If I was going to sell a province, it would have to be a province I don't want. For example, if I was Britain and i ended up with a province in the middle of Europe due to a war where I had to conquer some one. Instead of trying to invest into it and possible allow it to be the target of others. I could possibly sell it to a nearby nation which is in Alliance with myself to keep/gain support with them for my advantage.
